Layered Bear-rito Dip

I was fortunate to harvest a Maryland black bear in 2011. I had most of the meat ground and this was a favorite dish from that harvest!



Brown ground meat in a skillet and add taco seasoning according to package instructions. Meanwhile, heat refried beans in a small pot. Spread seasoned and cooked meat in the bottom of a 9 x 13 casserole dish. Spread remaining ingredients in the following order, creating a thin layer of each: refried beans, then sour cream, then salsa, then lettuce, then shredded cheese. Serve with tortilla chips.

  • 1 lb ground bear meat
  • 1 packet taco seasoning of your choice
  • 1 large can refried beans
  • 16 oz sour cream
  • 16 oz jar of salsa
  • 2-3 cups shredded lettuce
  • 8 oz shredded cheddar cheese
