Cheesy Ramp Dip

​​Directions​

Mix ingredients and heat in a small crock pot on low setting for 2-3 hours until blended, stirring occasionally. Serve with your favorite crackers.

  • 8 oz cream cheese (softened)
  • 1 cup chopped wild ramps (include leaves and bulbs)
  • 2 cups shredded mozzarella
  • 1/2 cup grated parmesan
  • crackers of your choice

Notes:

Ramps are a wild leek that are found throughout Appalachia. They are one of the first wild edibles to emerge in the spring, making their appearance for a short time from late March through early May depending on the location. The entire plant from the leaves to the bulbs is edible. They have a flavor all their own, but the closest description would be a strong garlic to onion type taste.
