Air Fryer Snakehead Nuggets

This is a recipe my girlfriend and I created after bringing some snakeheads home from Blackwater National Wildlife Refuge, and we were inspired to try out my mom’s new air fryer. My masters thesis was on invasive species so I am glad my recipe is helping to make this invasive fish into a delicious meal!

​​Directions​

  1. Cut snakehead filets into nugget sized pieces. Make sure nuggets are not too thick.
  2. Put flour, eggs, and bread crumbs in 3 separate bowls.
  3. Add a splash of cold water to eggs and mix
  4. Add spices to bread crumbs.
  5. Dip nuggets into flour, then egg, then bread crumbs.
  6. Place dipped nuggets into the air fryer, but do not overcrowd (best if done in batches) Cook for 9 minutes at 380 degrees, flipping nuggets halfway. Before serving, cut into the bigger nuggets to ensure fish is cooked.

  • snakehead filets (at least two fillets from a 20 inch fish or larger)
  • 3/4 cup flour
  • two eggs
  • 3/4 cup bread crumbs
  • 1 teaspoon Old Bay seasoning
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon ground mustard

​Serving Suggestions

Serve with thousand island, ranch and/or honey mustard dipping sauce.
