Marinade for Goose Breast

Can't remember where I got this, but it's good for both goose and venison tenderloin.

​​Directions​

  • Combine all ingredients in a bowl or container for marinating.
  • Add 2 whole goose breasts.
  • Marinate 8 hours to overnight (longer is better).
  • Broil 11 minutes on each side.

Don't overcook or the meat will be shrivelled and dry. Venison tenderloin should marinate 3 days.

  • 3 teaspoons grated onion
  • 4 tablespoons grated carrot
  • 2 bay leaves
  • 1/2 tablespoon marjoram
  • 1 teaspoon rubbed sage
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups white wine (real wine, NOT cooking wine)
