Ramps are a wild leek that are found throughout Appalachia. They are one of the first wild edibles to emerge in the spring, making their appearance for a short time from late March through early May depending on the location. The entire plant from the leaves to the bulbs is edible. They have a flavor all their own, but the closest description would be a strong garlic to onion type taste.
